3' PolyPhoenix 7 Azeo / Bubbler Plates / Gin Basket Ditillation Mega Kit

The PolyPhoenix modular distillation range are primarily made out of a material called PPSU.
This material is 100% safe with hot alcohol vapour that will not leech any chemicals into your product.

PPSU is an excellent choice for components that are exposed to high temperatures (up to 200°C) and corrosive media due to its exceptional chemical resistance. As well as being extremely impact resistant.
We have decided to use this type of plastic because it also has superior thermal and mechanical properties with the added benefit of being transparent. This will allow us to injection mold intricate parts that would have been near impossible to do in stainless steel or lab-grade glass. Because this is a very unique type of plastic, it comes at a much higher cost per kg than other industrial plastics. So much so that it costs more than stainless steel.

The PolyPhoenix Condenser can be used in multiple configurations for your distillation set up. Most commonly it is used in the hammerhead configuration (horizontal). But it can also be used Vertically with some quick adjustments to the 3" TC housings.

What do Bubbler Plates do?
Bubble plates are used to create more reflux in the column. Think of it like modular distillation chambers that allow alcohol vapour to pass up the column, as well as a "downcomer" that lets excess liquid on the plate fall back to the plate below.
Each time refining and changing phase over and over until it reaches a condenser. This helps to regulate the rate that good spirit is collected and can help to produce a more consistent, high-quality spirit.

This rising and falling action helps to separate the different types of alcohol in the still, with lighter alcohols gradually moving upwards where they can be removed so that they don't form part of the final product. The heavier alcohols, on the other hand, remain lower in the column and are eventually removed once the unwanted alcohols that form the foreshots, and heads are removed.

Why would I use a Bubbler Plate?
They allow for greater control over the distillation process. The distiller can adjust the height of the plates to control the reflux ratio, this is the amount of vapour that is condensed and returned to the column.

Do Bubbler Plates have to be Copper? (Short Answer...Yes)
Having a high level of copper contact helps neutralise and remove flavour and aroma compounds that aren't desirable in the finished product, and by forcing the alcohol vapour to pass through the bubble plates multiple times this effect is greatly enhanced.

General Rules of Thumb:
3 Plates is for absolute maximum flavour transfer of your Whiskey, Rum or Brandy (WRB)
4 Plates is a perfect middle ground for versatility of higher strength with a lot of flavour passthrough.
5 Plates is for even greater strength distillate with still quite a bit of flavour pass over.
7 Plates will get you the highest purity, but the least amount of flavour carry over.
What is great about this particular T-WRB 5 setup is that you can simply swap out the bubble plate inserts for 3" TC Silicone Seals and treat it as a 4, 3, 2 or single plate still. Due to the thermal capacity of the PPSU PolyPhoenix Still you will not get a great deal of passive reflux from the column wall. Meaning you'll get maximum flavour through the height of the still even with fewer plates in a 5 or more column high unit.
