White charcoal referred to as 'Binchotan" is the choice of professional chefs and home grilling enthusiasts who demand the best.

HIZO Kajiroshi product line has been inspired by the Japanese cooking techniques made popular with the use of Hibachis.
This style of cooking combines the centuries-old tradition of the "fire bowl" (hibachi) with the development of high-quality Japanese charcoal, binchotan, during the Edo period.

The Kajiroshi White Charcoal hails from Indonesia using Premium Sono Hardwood for the Binchotan style white charcoal, and a mixed range of hardwoods for the Lump Charcoal.

3 Star, 4 Star & 5 Star Binchotan Sono

- Can be re-used multiple times
It can be extinguished (snuffed) and reused multiple times. One method is to place it in a covered metal container to cut off oxygen until it cools down. 

- Long Lasting Burn Times
Binchotan is generally considered the best charcoal due to it's naturally high thermal properties when ignited. The result is very long lasting burn times with a steady and very hot flame.

- Does not spark when igniting
Harder to ignite due to the higher density, but that hurdle is greatly overcome with no sparks when wanting to ignite this white charcoal.

- Ashless cooking
Clean up is a breeze with much less ash after cooking compared to traditional lumpwood charcoal. This means that efficiency of burning all of that fuel is definitely achived with barely anything left behind.

- Virtually no smoke and imparts no additional flavor to the food being cooked.

5 Star - Large Uniform Long Pieces - 10kg
Premium long straight quarter cut white charcoal binchotan. Primarily used when up to temperature for extended long cooks on hibachi grills and outdoor bbq's. Requires larger ignition source to get lit. Roughly 150 to 200mm pieces.
The most premium Binchotan Sono pieces carefully selected for long Hibachis and Binchotan Cooking enthusiasts.

4 Star - Medium Sized Pieces - 10kg
Medium sized white charcoal pieces, mostly long pieces around 110mm with some 1/4 cut lengths instead of all rounds. Requires a good amount of ignition source.
The premium choice for bbq cooking enthusiasts.

3 Star - Small Sized Pieces - 10kg
Still premium Binchotan Sono but in smaller off cuts / shorter cuts. Much easier to light than 4 & 5 Star. A better fit in Chimney Starters.
Ideal for compact hibachis and mid week cooks.

2 Star - Mixed Premium Hardwood LumpCharcoal - 9kg
Cut in a medium to large range of sizes. These are much easier to ignite, burn extremely hot. Will burn out much faster than the more dense Binchotan wood. Harder to snuff out to re-use. Will impart a smokey flavour to your cooking.

1 Star - Mixed Hardwood Lump Charcoal - 9kg

"Pros: Nice consistent size just larger than a briquette. More than big enough for table top grilling and normal bbq use Good ignatiability Medium -long burn time Clean ( no dirt or rocks which are becoming common in one of Australia’s biggest produces ( my main reason for trying this)) Cons: Packed with the suspicious yellow packing tape. Lower density than the super premium stuff out there that results in slightly shorter burn times. But you still get just as much energy by weight and it’s easier to ignite than the super glassy stuff."
