Flaked maize is corn that has been steamed, rolled and gelatinised allowing it's starches to be readily accessible for conversion to sugar. Flaked maize has no enzymes of its own which it can use for conversion so simply add it to your mash vessel with other malted grains to allow conversion of the starch.
Flaked maize is ideal to be added straight to the mash tun for use in American pilsners and cream ales to lighten the colour and body.
Suggested Usage Rate:
Up to 10% of total grain bill.
Flaked Maize has no enzyme activity so it needs to be added to your mash tun with other malted grains.
