ALDC prevents the formation of diacetyl during fermentation. This is an off-flavour that is most commonly found in lagers. It has an aroma and flavour most commonly described as buttery.
Usually you would need to increase the temperature at the tail end of fermentation for a couple of days to perform a diacetyl rest. Using ALDC means you can completely skip step this and get to drinking sooner!

- Improves beer quality
ALDC causes the direct decarboxylation of alpha-acetolactate to acetoin, thus avoids the production of diacetyl. Acetoin and subsequently 2,3-butanediol have high flavour thresholds, and the amount formed is not perceived in beer.
Usage Directions: Add 0.5ml per 23L batch at yeast pitch.
Storage: Store at 0-10°C in a cool, dry place, away from sunlight.
