Say goodbye to buttery off-flavours and shorten your brew days. Zilla Labs ALDC prevents diacetyl formation right at yeast pitch, allowing you to completely skip the lengthy diacetyl rest and enjoy fresh, high-quality beer faster.

Key Benefits of Zilla Labs ALDC

  • Prevents Off-Flavors: Direct decarboxylation reduces diacetyl production, eliminating unwanted buttery aromas and tastes in lagers and ales.
  • Faster Turnaround: Skip the temperature ramp-up at the end of fermentation and significantly reduce maturation times.
  • Consistent Quality: Produces undetectable acetoin and 2,3-butanediol instead of diacetyl, ensuring cleaner overall beer profile.

How It Works

During standard fermentation, yeast produces alpha-acetolactate, which breaks down into diacetyl. ALDC causes the direct decarboxylation of alpha-acetolactate into acetoin. Because acetoin and its byproduct (2,3-butanediol) have exceptionally high flavour thresholds, they remain completely unnoticeable in your finished beer.

Dosing and Storage Instructions

  • Usage Directions: Add 0.5 mL per 23L (approx. 5–6 gallon) batch directly at yeast pitch. (Serves 60 batches worth!)
  • Storage Requirements: Store between 0–10°C (32–50°F) in a cool, dry place away from direct sunlight.

Q&A

Can you add this when dry hopping (either when actively fermenting or post ferment) if you miss it at yeast pitch?
