Turn up the heat and unlock an absolute explosion of ripe, saturated tropical character with Stay Suava. Designed in direct collaboration with brewing pioneer Chris White, CEO of White Labs, this recipe was crafted to introduce homebrewers to a breakthrough in fermentation: WLP079 Suava Ale Yeast, the ground-breaking non-GMO thiolised strain that delivers an unprecedented blast of pink guava, passionfruit, and bright stone fruit straight to your glass.
Australian brewers have long waited to experience true, bio-engineered levels of thiol biotransformation without GMO restrictions—and Stay Suava finally delivers.
Cranking the Thiol Dial to Eleven
As Chris put it when he sat down with us, this beer is all about knowing how to "crank the thiol dial." Suava works by enzymatically freeing bound, aromatic thiols that normally remain hidden in your hops and malt, turning them into pure, volatile tropical aromatics. To give this yeast maximum fuel to burn, we loaded the recipe with Phantasm-boosted powerhouses Super Sauvin and Mega Motueka, backed by a massive dry-hop pairing of Citra and Strata.
- Drive the Heat: Forget cool ale temps. Suava loves the heat. Fermenting hot between 25°C and 30°C (with Chris’s personal sweet spot dialed right at 28°C) supercharges the yeast’s enzymatic activity, accelerating thiol conversion without throwing harsh, off-putting fusels.
- Choose Your Finish: Ferment it straight for a luscious, juicy pale ale, or pick up the optional glucoamylase enzyme add-on to follow Chris's exact brew day method. Adding glucoamylase strips the gravity down to an ultra-crisp, dry 1.006, ensuring zero cloying sweetness and letting every single drop of intense guava, dank passionfruit, and bright citrus punch right through.
- The Backbone: Anchored by a clean bittering charge of Magnum to hit 33 IBUs, this kit is dialed in with a firm, clean bitterness that provides the perfect counterweight to the sheer volume of juicy tropical fruit, keeping the finish structured, crisp, and endlessly drinkable.
- The Pioneer's Playbook: Want to see the science in action? Chris walks through the yeast selection, the thiol precursors, and the dialed-in fermentation parameters in our brew day video so your batch turns out world-class.
