Star Anise comes from the Illcium verum tree, native to Southeast Asia. Often seen as an inexpensive substitute for true anise in cooking, the distinctive star shaped fruits contain the aroma molecule anethole, responsible for the anise flavor.
Upon opening the bag you will really appreciate the power of this herb. Intense aromas of fresh liquorice, sarsaparilla may come to mind. Be careful not to add to much of this potent herb as it can quickly dominate any gin or other dish you add it to, but once you have that perfect balance, it creates a richness that is hard to recreate with any other spice.
