Traditional Flavour Balance and Texture

• Banana Notes: Pronounced isoamyl acetate is generated at the higher end of the optimal fermentation range.
• Clove Notes: Subtle 4-vinyl guaiacol character is produced at the lower end of the optimal temperature range.
• Texture: Expect a smooth body and a persistent, signature haze characteristic of the style.

Fermentation & Pitching Details

• Fermentation Range: 18-22°C (64-72°F) is the optimal range; the full functional range is 15-25°C (64-72°F)
• Direct Pitching: Designed to be sprinkled directly onto the surface of your wort with no pre-oxygenation or rehydration required before pitching.
• Attenuation: High attenuation rate of 80–91%.Alcohol Tolerance: Robust tolerance up to 10% ABV.
• Flocculation: Low, contributing directly to the persistent haze.

Packaging & Dosage

One sachet is enough to treat a single 19-23L batch.

When calculating for larger batches, use at a rate of 0.5-1g per Liter. We recommend rounding up by one full sachet rather than measuring out the yeast exactly.

HEFE bricks are designed to provide maximum cell count for superior pitching rates and reliable fermentation every time.

Calculation for Larger Batches

• Use at a rate of 0.5-1g per Liter (approx. 50-100 g/hL).
  
• Use upper range for stronger clove expression or higher gravity wheat beers.
