Flaked maize is corn that has been steamed, rolled and gelatinised allowing it's starches to be readily accessible for conversion to sugar. Flaked maize has no enzymes of its own which it can use for conversion so simply add it to your mash vessel with other malted grains to allow conversion of the starch. Flaked maize is ideal to be added straight to the mash tun for use in American pilsners and cream ales to lighten the colour and body.

"Arrived in a timely fashion, well packed with a separate bag in the box for some enzymes. Looking forward to making magic with it (thanks little yeastie beasties). Probably going to be a 5 star job, going by past purchases and what it's making, so I gave it 5. 25kg maize, 6kg Black Forrest malt, and 1kg of toffee malt. Gonna be a banger. 😁"
