“0” Soft Wheat Flour NUVOLA and NUVOLA SUPER both perfect for creating AIRY, CRUNCHY and FRAGRANT cornice (crusts). • Nuvola is used for leavening within 24 hours allowing preparation of VOLUMINOUS and ALVEOLATE doughs. Protein Value: 12.5% - W: 270 ÷ 290

Nuvola Super is used for even longer leavening times of 36-48 hours and is also highly recommended for
the preparation of Biga, Poolish and Sourdough.
Protein Value: 13.5% - W: 320 ÷ 340

Both flours 100% NATURAL, the result of an accurate selection of HIGH FERMENTATION grains to yield very fast rising times.

Best flour I have used

"The Caputo SN is by far the best flour I have used so far, I love all Caputo flours including the blue and red but this is next level. Bit harder to work with than the others, I normally do a poolish dough at 65% hydration but with the SN it felt like it was at 70% so will dull it back to 62% on the next bake. Other than that it's a very smooth, soft dough that produces a super airy crust with ease. Will by my new go to flour. Delivery to Sydney was also super fast thanks to KEGLAND!"
